Remember also that this smoker is not rain-proof; so do take the necessary precautions. The heater element should be wiped off after every cooking session. While the rest of the interior should be coated with a light layer of vegetable oil, no oil should be applied to the element itself, nor to the controller. Neither the wood chip pan nor the water pan should be placed directly on the heating element.

DRIP FEED An inherent weakness in the design of vertical smokers is the problem of drippings falling onto the wood chips and the heating element. Even though the element can withstand quite a bit of grease, it is recommended that you wipe it clean after every use, having allowed it to cool down completely first. You could place a layer of foil on the protective mesh, under the water and wood-chip pans. This could interfere with the flow of heat from the element, but is worth a try. Or you could try the idea of placing an aluminum pan on the bottom rack to catch the drippings. If you allow the grease to fall to the bottom, you may find that it doesn't run perfectly out of the drain. This is because the bottom panel is not angled sufficiently to guide the grease to the hole, or the smoker is standing at a slight angle. The grease will probably seep out of the bottom of the door and run down the legs of the unit. A simple solution would be to place pie plates underneath the legs, to spare your patio floor from grease stains. It is hoped that the manufacturer will rectify this deficiency in new models. What is a bbq smoker without smoke? Er... Let's rather get this thing puffin'! As usual, certain users prefer a heavier smokey flavor than others. If that's you, then you can try the following tip to improve the smoke generation from the wood chip pan. The most straightforward method is to turn the smoker to high (+ 300°F) for up to an hour, and turning it down to the desired level once the smoke gets going. Do this before putting the meat in the smoker. If you need even more smoke, forming a "tent" of foil over the top of the wood-chip pan will prevent drippings from falling onto the wood chips and killing the smoke. You do not need expensive wood pellets; any wood chips of your choice will do. It is better not to use wood chunks.
