GREEN CHARCOAL
It is believed that the additives in regular charcoal briquettes will affect the flavor of the meat being smoked. It is recommended that you rather use lump charcoal, which is more environmentally friendly and also leaves very little ash. And, because it is enclosed, the cooking unit also requires much less lump charcoal than other grills. It is unnecessary to clean out the charcoal after every cooking session. You simply need to close the dampers in order to smother the flames, and you can then use the remaining lump charcoal for your next session. The burnt ashes will have fallen through to the ash pan, and you can remove them from the bottom of the cooker once the unit has completely cooled down. |

In order to achieve the indirect heating required for low and slow smoking, you will need a plate setter called a Smokin' Stone to deflect the heat. It can also serve as a pizza stone, or baking stone, to turn your Akorn into an oven. It is sold separately.
